If you don't have a smoker handy this can be done on standard BBq as well. Get your coals up to medium heat.Soak some Mesquite wood chips in water for about 20mins.Get some tin foil and perforate with a fork, Place the wood chips in the Tin foil Pouch and Place over the coals.Rake the coals to one side if possible and place a Fireproof tin or Dish with some Italian dressing(Bottled form works good).Place the tin with the Foil wrapped Wood chips .Dip/smother your King fish steaks in the italian dressing and place on the rack, cover BBq and allow smoker to do its work.The steaks i had were about 2" thick so i gave them 2 Hours or until meat was firm to touch.Might need just a little less time with smaller steaks.Goes great with a Nice side salad and great the next day cold as well.
