I tried this recipe after catching quite a few dorado this weekend and its the best baked fish recipe I've had in a long time. If you got a dorado fillet sitting in your freezer this is worth a shot.


Baked Dorado
2 lbs Dorado filets
3 shots of rum (light or dark)
Juice from two limes
1 lemon sliced and pitted
2 tablespoons of oregano
4 tablespoons of unsalted butter
2 sliced onions
Preparation:
Marinate fish filets with seasonings, rum, lime juice, and onions.
Refrigerate overnight
Cooking:
Preheat oven to 350 degrees.
Put fish and marinate mixture into baking dish
Bake covered with foil for approximately 20-30 minutes or until fish flakes

Thanks for the receipe Kinks..sounds Yummy !

Just 2 BIG little problems.......

1. my oven has a max temp of 280Degs

2. I need to catch a dorado. :lol:

Dont worry too much....we will just invite ourselves over to your place :mrgreen: I'm sure that the other forum members would only be toooooo happy :twisted:

Its 330F sorry =P 330C and you'd have a kitchen fire, sorry our ovens American, didn't even think twice about it.
